Vez is feminine because it derives from Latin "vicem" (accusative of "vix"), which belonged to the third declension. In Latin, "vix" was feminine, and Spanish retained this feminine gender through the regular sound changes of Latin to Spanish (including the loss of the final -m and the development of -z). Like many third-declension Latin nouns ending in -x, it maintained its feminine gender in Spanish.
